I am late in publishing this sake on my site. This is actually “sake of summer”. Yamamoto is one of the popular surnames in Japan, and this specific sake uses the name of brewery as main brand. But it also comes with sub brand “Doki Doki” which usually stands for heart beat.
According to the brewer’s comment on the back of bottle, this sake used the special yeast which produces much malic acid that leads us to the imagination of apple flavor. The brewer recommends that this sake be chilled and enjoyed the fresh apple taste.
This brewery tried to sell catchword like “Doki Doki” which tempted buyers to grab this bottle. (Sure I was one of them.) Usually however this kind of buzzword ends up with disappointment of buyers. This is not exception of this sake.
OK, it was true that this sake comes with the sense of apple flavor. Just felt the faint taste of apple vinegar. That’s it. Nothing more that that. This sake misses the intricate combination that sake usually owns as the key characters like richness. As mentioned above, this is “sake of summer”. The brewer just intended to deliver simple sake which is good for the season. To me however this sake is not good for all seasons. The retail price after tax is $15.00.
